fudge cake

I made a fudge cake yesterday that was so good I had to share the recipe. It’s from Joy of Cooking. I pared down the amount of sugar (as I usually do with this book) and it turned out great! Here is my edited version:

  • 1 3/4 cup flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup sour cream
  • 6 tablespoons (3/4 stick) margarine, softened
  • 3 ounces chocolate, melted (over double boiler or with microwave)
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/4 cup coffee
  • Sift together in a large bowl the flour, sugar, baking soda & salt. Add the sour cream and margarine, and beat for 2 minutes. Add the melted chocolate, eggs, vanilla and coffee–beat again for 2 minutes.

    Pour into a 13 x 9-inch round pan (or two 8×8 pans or two 9×2 round pans). Bake in 350° F oven until toothpick inserted into the center comes out clean–about 25-30 minutes (20-25 min if using two pans).
